There is nothing quite better than home made mashed potatoes. Most restaurants don’t even make real mashed potatoes anymore. Many use that gross powder mix to make their potatoes. This mashed potato recipe is great for kids and families. It has so many uses. You can eat it as mashed potatoes or put it in a casserole. How about mashed potato pancakes in the morning.
For this recipe I’m going to use 12-15 large bakers. This recipe would be perfect for a big family event or a potluck.
Start by peeling all of your russet potatoes. Then cut all off the bad spots or black spots out and wash them off.
I like to cut my potatoes into similar sized chunks. This will help them cook evenly. Once the potatoes are all cut up go ahead and toss them in a pot and fill just above the potatoes with water.
Go ahead and boil the potatoes until soft. Once they reach a boil it takes 20 minutes or so. I like to use a fork and stab some potatoes if the fork easy slides through the potatoes then the are soft enough and ready to mash.
Now grab some oven mitts and using the lid as your strainer go ahead and pour all of the water of your potatoes. Careful, because even the steam is extremely hot and you can burn yourself pretty good.
Now I like to pour my potatoes into my crock pot or pan for the steam table. You can make your potatoes right in the pot you boiled them in and transfer them to a nice serving dish later. I like to put them in a crock pot on warm so they stay hot until I’m ready to serve. Timing is everything when making a meal for your family. You want to serve everything together at the same time and every item should be hot.
Add about a 1/4 cup of granulated onion powder and a 1/4 cup of granulated garlic powder to your potatoes. I like to sprinkle coarse black pepper and sea salt evenly across the top of the potatoes. I pretend I am seasoning a big pile of potatoes to eat. This is a fool proof method for getting it exact without measuring. LOL For those of you who want a measurement start with 2 tablespoons of pepper and salt. You can adjust it later if you need more. Remember you can always add spices, but you can’t take it away.
Now I add 1/2 – 1 cup of heavy cream.
You can use a potato masher, but I like to use my immersion blender. This is an awesome tool for your kitchen and it will save you a ton of time. Using my immersion blender I blend up and down over and over until the potatoes are completely mashed and smooth.
Look at that beautiful batch of tasty mashed potatoes. Give it a taste. If you find yourself wanting another bite then it is seasoned perfect. If you are thinking it needs gravy or butter then you haven’t quite got your seasonings right. I always season to taste it is done when you do a little dance during your bite.
