I am going making the mac n cheese just for the mac n cheese balls, so I will be chilling everything together before I make the balls. It is best to chill overnight. In a rush I’ve chilled in the freezer stirring every half hour or so until chilled. They are properly chilled when you can make a nice hard balls.
- Start with chilled mac n cheese.
- Add 1 1/2 cups mayo
- Add 1 cup sour cream
- Add 1 1/2 pounds of shredded parmesan cheese
- Mix thoroughly and form into 1 1/2 inch balls. About the diameter of a half dollar.
- Dredge in flour, egg, followed by panko.
- Fry until crispy.
These are perfect just the way they are if you did them right. They have to be really gooey cheesy. If they are a little dry I will add more mayo and sour cream. They are also good dipped in ranch, BBQ sauce or cheese sauce.
