One thing that is always important for a mom is to turn leftovers into something else. I had a bunch of leftover chicken quarters, so I pulled all the meat off the bone to make this delicious chicken salad sandwich recipe. This chicken came off our smoker, so it is going to give a nice smoky flavor profile to the sandwich. Don’t worry any leftover chicken or probably even turkey would work great. This sandwich is topped with our home made coleslaw recipe. Don’t forget to toast the bun, it makes a huge difference.
This recipe is perfect for dinner with the family, family reunions, BBQs, picnics, pot lucks and other events.
Chicken salad sandwich ingredients.
- 8 cups of boneless chicken.
- 1/2 red onion diced.
- 2 large pickles diced.
- 1 bunch diced fresh dill.
- 2-3 stalks of celery diced.
- 2 cups of shredded sharp cheddar.
- Dice 8 or so hard boiled eggs.
- 2 cups regular mayo.
- 3/4 cup mustard.
- Coarse black pepper to taste.
Mix thoroughly and chill before serving. Don’t forget to top slaw.
